This is one of my most popular salads. It is so yummy it’s hard to stop eating it!
Super easy to make
Quinoa and Herb Salad
1/2 Cup of cooked Quinoa ( cooked as per instructions)
1/2 baby cos lettuce chopped
1 large tomato chopped
1/2 red capsicum chopped
1/2 carrot grated
1/2 cucumber chopped
1/2 Zucchini chopped
1 large handful of chopped Coriander.. ( you can omit this if you like or add another herb if you prefer)
1/4 Cup of Pumpkin seeds
2 small cubes of feta cheese crumbled through salad ( optional but if you can have dairy this is divine as it slightly melts into the salad)
Juice of 1 lemon sprinkled with olive oil salt and pepper..
Mix all ingredients together..
