Easy Ginger Crunch
1 Cup of Brazil Nuts
1 Cup of Dessicated Coconut
1 Cup of Medjool Dates
1 Tablespoon of fresh Ginger grated
1/4 Cup of Melted Extra Virgin Coconut Oil
Place ingredients in a food processor or blender. Once combined press into a tin lined with baking paper. Place in the fridge.
2/3 Cup Of Cashew Nuts
1 and 1/2 Teaspoons of Vanilla Paste
1/4 Cup of Maple Syrup
1/4 Cup of Water
1 and 1/2 Teaspoons of Lemon Juice
1 and 1/2 Tablespoons of ground ginger
150g of Cacao butter ( melted )
Place all the ingredients into a food processor or blender except the cacao butter until combined, while the blender is running on low speed drizzle in the cacao butter for about 5 sec, do not over blend.
Pour the topping over the cooled base and place back in the fridge.
