Chocolate Mint Crackle Slice
1 Cup of dehydrated Buckwheat
1 Cup of Coconut
1/2 Cup of Currants
1/2 Cup & 1 Tablespoon of Cacao Powder
3/4 Cup of Coconut Oil
2 Tablespoons of Maple Syrup
Mix dry ingredients together in bowl. Melt Coconut oil in a saucepan on low heat then mix with the dry ingredients. Press mixture into a baking tin lined with baking paper and place in the freezer to set. Should be about 1/2 inch thick.
1 Cup of Cashew Nuts ( soak for about an hour in cold water prior to soften)
1/2 Cup of Coconut Cream
1 and a 1/2 Tablespoons of Squeezed Lemon Juice
1 and a 1/2 Tablespoons of Maple Syrup
1/2 – 1 Teaspoons of Mint Essence ( experiment with the amount depending on how strong you like it )
Pinch of salt
Place all ingredients into a food processor/nutribullet/blender and spread over base. Place back in the freezer to set.
1/2 Cup of Almond Meal
6 Medjool Dates
4 Tablespoons of Cacao Powder
1/4 Cup of melted Coconut Oil
Combine dates and Almond meal in a food processor nutribullet/blender. In a bowl mix together with oil and cacao powder. Spread over slice and place back into the freezer to set.
It takes a bit of effort but well worth it!
