High in fibre, protein and antioxidants, when you start the day with a brekky like this you feel energised and full for ages…I try and mix up my breakfast options so I don’t get bored…this is a great addition to my weekly repertoire. Try if for yourself
3 Cups Water
1 Cup soaked Cashew Nuts ( for about an hour)
1/4 Cup Chia Seeds
1 Tablespoon Maple or Honey
1 Teaspoon Vanilla Extract
1/2 Nectarine chopped
2 Tablespoons Cacao Nips
1 Tablespoon Desiccated Coconut
Place water and cashews into a blender and liquify for 1.20 mins. Add the chia seeds, maple and vanilla and mix for 10 secs. Pour into glass jars (with lids), give them a shake and place in the fridge. They Should set in a few hours or best to make the night before, all set for the morning. This chia pudding recipe will make enough to last a few days.
Place chia pudding in a bowl and sprinkle with nectarines, cacao nips and coconut.
It is so easy and quick once you have the chia pudding made that breakfast becomes a breeze.
